Endive With Herbed Goat Cheese Recipe

Ingredients
  • 60 Belgian endive leaves (about 8 heads)
  • 3 tbsps sliced fresh cilantro
  • 6 grape or cherry tomatoes, thinly sliced
  • 2 tbsps olive oil
  • 2 tsps grated lemon rind
  • 14 oz goat cheese
  • 1/4 tsp salt
  • 3 tbsps sliced fresh chives
  •  Garnish: fresh cilantro leaves
  • 1 tbsp fresh lemon juice
  • 1/4 tsp freshly ground pepper

Directions
  • Step #1 Process first 4 ingredients in a food processor/blender until smooth.
  • Step #2 Spoon into a small bowl; stir in the cilantro & next 3 ingredients.
  • Step #3 Pipe or spoon about 1 1/2 tsps cheese mixture onto each tip of endive leaf, top this with 1 tomato slice.
  • Step #4 Garnish, if desired.
  • Step #5 Serve as soon as possible, or cover & chill up to 4 hrs.
