Cranberry Tapenade Recipe

Ingredients
  •  Sweet potato chips
  • 2 c fresh or frozen cranberries
  • 1 small navel orange, unpeeled & quartered
  •  Garnishes: extra cranberries, fresh cilantro sprigs
  • 1 small sweet potato (about 6 oz)
  • 1/8 tsp ground cinnamon
  • 1/8 tsp salt
  • 2 jalapeño peppers, halved lengthwise & seeded
  • 1/2 c sugar
  • 3 tbsps sliced fresh cilantro
  • 1/2 c sliced pecans, toasted

Directions
  • Step #1 Cook sweet potato in a small amount of boiling water just until barely tender.
  • Step #2 Drain & cool completely.
  • Step #3 Peel & finely dice sweet potato; set aside.
  • Step #4 Position knife blade in food processor/blender bowl; add orange quarters.
  • Step #5 Process until coarsely sliced, stopping once to scrape down sides.
  • Step #6 Add 2 c cranberries, sugar, & jalapeño pepper; pulse 2 or 3 times until mixture is finely sliced.
  • Step #7 Transfer mixture to a bowl; stir in the reserved sweet potato, pecans, & next 3 ingredients.
  • Step #8 Cover up & chill at least 1 hr.
  • Step #9 Serve with sweet potato chips.
  • Step #10 Garnish, if desired.
