Potato-and-caviar Hors D'oeuvre Recipe

Ingredients
  • 1/4 c low-fat sour cream
  • 1/3 c plain nonfat yogurt
  • 24 (1/4-inch-thick) slices red potato (about 6 medium)
  • 2 tbsps finely sliced fresh chives
  • 1 tbsp red caviar
  • 2 tbsps finely sliced fresh parsley

Directions
  • Step #1 Steam potato slices, covered, 12 mins or just until tender.
  • Step #2 Drain; let cool.
  • Step #3 Combine the yogurt & sour cream in a bowl, & stir well.
  • Step #4 Spoon the mixture onto several layers of heavy-duty paper towels, & spread to 1/2-inch thickness.
  • Step #5 Cover up with extra paper towels, & let this stand for 10 mins.
  • Step #6 Scrape mixture into a pastry bag fitted with a fluted tip; set aside.
  • Step #7 Combine the chives & parsley, & press 1/2 tsp over 1 side of each potato slice; pipe about 1/2 tsp yogurt mixture onto herb mixture.
  • Step #8 Top yogurt mixture with 1/8 tsp caviar.
  • Step #9 Serve as soon as possible.
