Chili Con Queso Recipe

Ingredients
  • 1 small onion, sliced
  •  Tortilla chips
  • 1/2 to 3/4 c chicken broth, divided
  • 1 (16-oz) loaf pasteurized prepared cheese product, cubed
  • 1 (10-oz) can tomatoes with green chiles, drained

Directions
  • Step #1 Cook onion in 1 tbsp chicken broth in large saucepan over low heat/flame 5 mins or until tender, stirring often.
  • Step #2 Stir in cheese & tomatoes until cheese begins to melt; stir in the chicken broth, 1/4 c at a time, until dip is desired consistency.
  • Step #3 Serve with tortilla chips.
  • Step #4 Note: For testing purposes only, we used Velveeta for pasteurized prepared cheese product.
