Baba Gha-hummus Recipe

Ingredients
  • 1 (15-oz) can chickpeas (garbanzo beans), rinsed & drained
  • 1/8 tsp ground red pepper
  • 3 tbsps tahini (sesame-seed paste)
  • 1 tsp ground coriander
  • 1 large eggplant
  • 3/4 tsp salt
  • 2 garlic cloves, sliced
  • 1 1/2 tsps ground cumin

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Pierce eggplant with a fork.
  • Step #3 Place eggplant on a jelly roll pan.
  • Step #4 Bake at 375° for 30 mins or until tender.
  • Step #5 Cool & peel; discard skin.
  • Step #6 Combine eggplant, tahini, & remaining ingredients in a food processor/blender; process until smooth.
