Olives Scaciati Recipe

Ingredients
  • 2 lbs large, unpitted green olives
  • 3/4 c extra-virgin olive oil
  • 2 c 1/2-inch celery pieces with leaves
  • 1 tsp pepper
  • 2 tbsps dried oregano
  • 6 garlic cloves, coarsely sliced
  • 3/4 tsp dried crushed red pepper
  • 1/4 c red wine vinegar

Directions
  • Step #1 Wash olives, & drain.
  • Step #2 Gently lb each olive with a wooden mallet to open.
  • Step #3 (Don't mash, & don't remove pit.
  • Step #4 ) Place olives & celery In a large-ish bowl.
  • Step #5 Whisk together olive oil & next 5 ingredients until mixed; pour over olive mixture, tossing to coat.
  • Step #6 Cover up & chill 8 hrs.
  • Step #7 Refrigerate up to 1 month.
  • Step #8 Serve at about room temp.
