Chunky Tomato-fruit Gazpacho Recipe

Ingredients
  • 1/2 c finely sliced Vidalia or other sweet onion
  • 1 c finely sliced nectarines (about 3 medium)
  • 2 c finely sliced tomatoes (about 3/4 lb)
  • 3 tbsps fresh lemon juice
  • 2 c finely sliced honeydew melon (about 3/4 lb)
  • 2 c finely sliced cantaloupe (about 3/4 lb)
  • 1/2 tsp salt
  • 1/4 c sliced fresh basil
  • 1 c finely sliced seeded peeled cucumber (about 1 medium)
  • 3 tbsps sliced fresh mint
  • 1 tsp sugar
  • 1 jalapeño pepper, seeded & finely sliced
  • 1 c finely sliced mango (about 1 medium)
  • 1 c fresh orange juice (about 4 oranges)

Directions
  • Step #1 Combine all ingredients In a large-ish bowl.
  • Step #2 Cover up & chill at least 2 hrs.
