Blue Cheese Logs Recipe

Ingredients
  • 2 c finely sliced pecans, toasted & divided
  • 2 (4-oz) packages crumbled blue cheese
  • 1/2 tsp ground red pepper
  • 1 1/2 tbsps Worcestershire sauce
  • 1/2 small onion, sliced
  • 2 (8-oz) packages cream cheese, softened
  • 8 oz sharp Cheddar cheese, cubed
  • 2 c finely sliced fresh parsley, divided
  •  Crackers

Directions
  • Step #1 Process cream cheese & next 5 ingredients in a food processor/blender 1 to 2 mins until mixd, stopping to scrape down sides.
  • Step #2 Stir together cheese mixture, 1 c pecans, & 1/2 c parsley.
  • Step #3 Cover up & chill 1 hr.
  • Step #4 Shape cheese mixture into 4 (7-inch) logs.
  • Step #5 Combine remaining 1 c pecans & 1 1/2 c parsley.
  • Step #6 Roll logs in parsley mixture; cover & chill until ready to serve.
  • Step #7 Serve with crackers.
  • Step #8 Note: For testing purposes only, we used Cracker Barrel cheese for Cheddar cheese.
  • Step #9 Cheese logs may be prepared ahead & frozen, if desired.
  • Step #10 Thaw in refrigerator overnight.
