Roasted Red Pepper Bruschetta Recipe

Ingredients
  • 1 (3-oz) package goat cheese, crumbled
  • 2 tbsps olive oil
  • 1 (16-oz) French bread loaf
  • 1 (7-oz) jar roasted red bell peppers, drained & cut into thin strips
  • 1 medium-size purple onion, coarsely sliced
  • 1 tsp sugar
  • 25 small basil leaves

Directions
  • Step #1 Cut bread into 24 slices; place on baking sheets.
  • Step #2 Broil slices 5 1/2 inches from heat 1 min on each side or until golden brown.
  • Step #3 Set aside.
  • Step #4 Cook onion & sugar in hot oil In a large-ish skillet over medium-low heat, stirring every once in awhile, 25 mins.
  • Step #5 Cool.
  • Step #6 Top bread evenly with onion mixture, basil leaves, & pepper strips.
  • Step #7 Sprinkle top evenly with cheese, & broil 1 min or until cheese melts.
  • Step #8 Serve as soon as possible.
