Roasted Tomatillo Salsa Recipe

Ingredients
  • 1 tbsp lime juice
  • 1 lb tomatillos (about 8, each 2 in. wide)
  • 1/4 tsp sliced garlic
  •  Salt & peper
  • 1 tbsp sliced fresh cilantro
  • 1 or 2 green onions, rinsed, ends trimmed, & sliced
  • 1 fresh serrano chili (1/4 oz.)

Directions
  • Step #1 Remove & discard husks from tomatillos; rinse tomatillos.
  • Step #2 Rinse chili; remove & discard stem.
  • Step #3 Place tomatillos & chili in a 9-inch square baking pan & broil 4 inches from heat, until browned well on all sides, turning as needed, 12 to 15 mins total for tomatillos & 6 to 8 mins for chili.
  • Step #4 Remove vegetables as done.
  • Step #5 In a food processor/blender or mixer, green onions, whirl tomatillos, garlic, chili, & lime juice, pulsing just until mixture is coarsely sliced; do not overprocess.
  • Step #6 Stir in cilantro, then salt & pepper to taste.
  • Step #7 Nutritional analysis per tbsp.
