Turkey Empanaditas Recipe

Ingredients
  •  Dough:
  • 1/4 tsp salt
  •  Filling:
  • 1 1/2 tsps baking powder
  • 3 c all-purpose flour (about 13 1/2 oz)
  • 1/4 tsp freshly ground black pepper
  • 1/4 c chilled butter, cut into small pieces
  • 1 tsp sugar
  • 3/4 c ice water
  • 1/2 c water
  • 1 c reduced-fat shredded cheddar cheese
  • 12 oz ground turkey breast
  • 1 (6-oz) can no-salt-added tomato paste
  • 2 tsps chili powder
  • 1/2 tsp salt
  •  Cooking spray
  • 1 tsp ground cumin

Directions
  • Step #1 To prepare filling, heat a large skillet over medium-high heat.
  • Step #2 Coat pan with cooking spray.
  • Step #3 Add turkey; cook 5 mins or until browned, stirring to crumble.
  • Step #4 Stir in chili powder, 1/2 tsp salt, cumin, & pepper; cook 1 min, stirring often.
  • Step #5 Stir in 1/2 c water & tomato paste.
  • Step #6 Cook 2 mins or until turkey mixture thickens.
  • Step #7 Remove from heat; stir in the cheese.
  • Step #8 Place in a bowl, & cool to about room temp; cover & chill 30 mins.
  • Step #9 To prepare dough, lightly spoon flour into dry measuring c; level with a knife.
  • Step #10 Place flour, sugar, baking powder, & 1/4 tsp salt in a food processor/blender; pulse 2 times or until mixd.
  • Step #11 Add chilled butter; pulse 4 times or until mixture resembles coarse meal.
  • Step #12 With processor on, add 3/4 c ice water through the food chute, processing just until mixd (do not form a ball).
  • Step #13 Turn the dough out onto a floured surface; knead lightly 4 times with floured hands.
  • Step #14 Divide the dough into 24 portions.
  • Step #15 Working with 1 portion at a time (cover remaining portions to keep dough from drying), roll this into a 3 1/2-inch circle on a floured surface.
  • Step #16 Spoon 1 rounded tbsp turkey mixture onto half of circle.
  • Step #17 Fold dough over filling; press edges together to seal.
  • Step #18 Place on a large baking sheet.
  • Step #19 Repeat procedure with remaining dough & filling.
  • Step #20 Cover up with plastic wrap; freeze until firm.
  • Step #21 Place in zip-top plastic bags; freeze for up to 3 months.
  • Step #22 Preheat oven to 400º.
  • Step #23 Place frozen empanaditas on 2 baking sheets coated with cooking spray.
  • Step #24 Bake at 400° for 30 mins or until bottoms are golden brown & tops begin to brown.
  • Step #25 Serve warm.
