Dried Chile Salsa Recipe

Ingredients
  •  Garnish: fresh cilantro sprigs
  • 1 tsp ground cumin
  • 2 lbs Roma tomatoes, halved
  • 1 tsp salt
  • 6 garlic cloves, minced
  • 2 to 3 tbsps sliced fresh cilantro
  • 4 dried Anaheim chile peppers
  • 1 large onion, sliced
  • 1 tbsp olive oil

Directions
  • Step #1 Remove seeds from peppers.
  • Step #2 Place peppers in a saucepan with boiling water to cover; let this stand 30 mins.
  • Step #3 Drain.
  • Step #4 Peel & coarsely chop peppers.
  • Step #5 Bake tomato halves in a roasting pan coated with cooking spray at 450° for 20 mins or until blackened.
  • Step #6 Sauté garlic & onion in hot oil 3 mins or until tender.
  • Step #7 Pulse sliced pepper, onion mixture, tomato halves, salt, & cumin in a food processor/blender until chunky; stir in the cilantro.
  • Step #8 Garnish, if desired.
