Chicken Fiesta Salad Recipe

Ingredients
  • 1/2 c salsa
  • 2 skinless, boneless chicken breast halves
  • 1 tbsp vegetable oil
  • 1 (1.27 oz) packet dry fajita seasoning, divided
  • 1 onion, sliced
  • 1 (10 oz) package mixed salad greens
  • 1 (11 oz) can Mexican-style corn
  • 1 tomato, cut into wedges
  • 1 (15 oz) can black beans, rinsed & drained

Directions
  • Step #1 Rub chicken evenly with 1/2 the fajita seasoning.
  • Step #2 Heat the oil in a skillet over med-heat/flame, & cook the chicken 8 mins on each side, or until juices run clear; set aside.
  • Step #3 In a large saucepan, corn, mix beans, salsa & other 1/2 of fajita seasoning.
  • Step #4 Heat over med-heat/flame until warm.
  • Step #5 Prepare the salad by tossing the greens, onion & tomato.
  • Step #6 Top salad with chicken & dress with the bean & corn mixture.
