Step #1 Rinse & trim discolored ends from 2 lbs crimini, oyster, or common mushrooms (or a mixture) & coarsely chop.
Step #2 In a 6-quart pan over high heat, melt 1/2 c (1/4 lb.
Step #3 ) butter.
Step #4 Add mushrooms, 4 peeled & minced cloves garlic, 1 c sliced shallots, & 1 1/2 tsps each ground cumin & ground coriander.
Step #5 Cook, until liquid has evaporated & mixture is lightly browned, stirring often, 20 to 30 mins.
Step #6 In a food processor/blender, whirl mushroom mixture until smooth.
Step #7 Mix in salt & pepper to taste.
Step #8 Mound in a bowl.
Step #9 Sprinkle top with sliced parsley.
Step #10 Serve with toasted baguette slices.
