Walla Walla Beef Salad Recipe

Ingredients
  •  Asian fish sauce (nuoc mam or nam pla)
  • 3/4 c lime juice
  • 2 pink or ruby grapefruit (1 lb. each)
  • 3 c fat-skimmed beef or chicken broth or water
  • 1 Walla Walla or other sweet onion (1/2 lb.), peeled & cut lengthwise into thin slivers
  • 3/4 lb fat-trimmed beef tenderloin or other tender beef steak
  •  About 1 tbsp hot chili flakes
  • 3 tbsps lemon juice
  •  About 3/4 tsp kosher or coarse salt
  •  About 4 c watercress sprigs, rinsed & crisped

Directions
  • Step #1 Cut beef into matchstick-size strips about 1/16 inch thick & no more than 2 inches long; put into a large bowl.
  • Step #2 In a 4- to 5-quart pan over high heat, bring broth to a boil.
  • Step #3 Pour over beef & stir.
  • Step #4 For rare beef, let this stand 5 mins, drain at once; for medium, then drain (save broth for other uses).
  • Step #5 In bowl, lemon juice, mix meat with lime juice, & onion; add chili flakes & salt to taste.
  • Step #6 Cover up & chill until cold, at least 1 hr or up to 6 hrs, stirring every once in awhile.
  • Step #7 Meanwhile, with a small, working over a bowl, sharp knife, cut off & discard peel & white membrane from grapefruit.
  • Step #8 Cut between fruit segments & inner membranes to release fruit into bowl.
  • Step #9 Squeeze juice from membranes into bowl; discard membranes.
  • Step #10 With a slotted spoon, lift beef mixture from bowl & mound equally on plates.
  • Step #11 Lift grapefruit segments from juice & arrange equally alongside; reserve juice for other uses.
  • Step #12 Add equal portions of watercress.
  • Step #13 Spoon beef marinade over fruit & greens.
  • Step #14 Add fish sauce or more salt to taste.
  • Step #15 Nutritional analysis per main-dish serving.
