Fruit-and-bran Muffins Recipe

Ingredients
  • 1/4 c firmly packed dark brown sugar
  • 1 1/4 c uncooked oat bran hot cereal
  •  Vegetable cooking spray
  • 1/2 tsp ground cinnamon
  • 1/4 c egg substitute
  • 3 tbsps applesauce
  • 1/3 c golden raisins
  • 1 large Granny Smith apple, peeled & sliced
  • 1 tbsp baking powder
  • 1/4 tsp ground nutmeg
  • 2 c O-shaped sweetened oat-and-wheat bran cereal
  • 1 c fat-free milk

Directions
  • Step #1 Bring milk to a boil In a large-ish saucepan; remove this from heat, & stir in the O-shaped cereal.
  • Step #2 Let stand 5 mins or until cereal is softened.
  • Step #3 Stir in apple & next 8 ingredients until mixed.
  • Step #4 Place paper baking c in muffin pans, & lightly coat with cooking spray.
  • Step #5 Spoon batter evenly into c.
  • Step #6 Bake at 375° for 18 to 20 mins or until a wooden pick inserted in center comes out clean.
  • Step #7 Note: For testing purposes only, we used Cracklin' Oat Bran Cereal for sweetened cereal & Hodgson Mill Oat Bran Hot Cereal for uncooked cereal in this recipe.
