Chicken Flautas Recipe

Ingredients
  • 8 oz shredded Cheddar cheese
  • 4 skinless, boneless chicken breast halves - cooked & shredded
  • 1 tbsp vegetable oil
  • 36 (6 inch) corn tortillas
  • 1 (8 oz) jar picante sauce
  • 8 oz shredded Monterey Jack cheese
  • 1/4 tsp ground cumin

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 In a medium bowl mix the shredded chicken, picante sauce & ground cumin.
  • Step #3 Mix together.
  • Step #4 In a small skillet heat vegetable oil over medium high heat.
  • Step #5 Place a corn tortilla in the oil for 1 to 2 seconds on either side to soften.
  • Step #6 Repeat with all of the tortillas (if possible, have someone help you do this).
  • Step #7 Place tortillas on paper towel to soak up some of the oil.
  • Step #8 Put 1 tbsp of the chicken mixture in the center of a tortilla & sprinkle some cheese on top.
  • Step #9 Roll up tortilla & place on a lightly greased cookie sheet, seam side down.
  • Step #10 Repeat with all of the tortillas until chicken mixture is gone.
  • Step #11 If there is any cheese left over, sprinkle it over the rolled tortillas.
  • Step #12 Bake tortillas in the preheated oven for 15 to 25 mins or until tortillas are a little crispy & golden brown.
