Breakfast Soft Tacos With Persimmon Salsa Recipe

Ingredients
  • 1/4 tsp salt
  • 2 tbsps fresh lime juice
  • 3 1/4 c cubed peeled baking potato
  • 6 (8-inch) flour tortillas
  •  Cooking spray
  • 1/3 c finely sliced red onion
  •  Salsa:
  • 6 large eggs, lightly beaten
  • 1 3/4 c sliced peeled ripe persimmon (about 2 medium)
  •  Tacos:
  • 1 seeded & sliced jalapeño pepper
  • 1/2 c (2 oz) shredded Monterey Jack cheese with jalapeño peppers
  • 1 tbsp minced fresh cilantro

Directions
  • Step #1 To prepare salsa, mix first 6 ingredients; set aside.
  • Step #2 To prepare tacos, place potato in a microwave-safe bowl.
  • Step #3 Cover up with plastic wrap; microwave at HIGH 5 mins.
  • Step #4 Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Step #5 Add potato; cook 5 mins, stirring every once in awhile.
  • Step #6 Stir in cheese & egg; cook 3 mins or until soft-scrambled, stirring constantly.
  • Step #7 Warm tortillas according to package directions.
  • Step #8 Spoon about 2/3 c egg mixture down center of each tortilla.
  • Step #9 Top each with 1/3 c salsa; roll up tortillas.
