Broccoli-cheese Breakfast Casserole Recipe

Ingredients
  • 1 plum tomato, thinly sliced
  • 1 small onion, sliced
  • 1 tsp pepper
  • 1 1/2 c (6 oz) shredded three-cheese gourmet Cheddar cheese mix, divided
  • 1/4 c milk
  • 1/2 tsp salt
  • 8 large eggs, lightly beaten
  • 1/2 lb ground pork sausage
  • 1 c ricotta cheese
  • 1 (10-oz) package frozen broccoli cuts, thawed

Directions
  • Step #1 Cook ground pork sausage & sliced onion in a skillet over medium-high heat, stirring until sausage crumbles & is no longer pink; drain.
  • Step #2 Toss together sausage mixture, broccoli, & 1/2 c cheese mix.
  • Step #3 Spoon into a lightly greased 11- x 7-inch baking dish.
  • Step #4 Stir together 1/2 c cheese mix, eggs, & next 4 ingredients; pour over broccoli mixture.
  • Step #5 Sprinkle top with remaining 1/2 c cheese mix.
  • Step #6 Arrange tomato on top.
  • Step #7 Bake at 350° for 30 mins; uncover & bake 15 more mins.
  • Step #8 Let stand 10 mins before serving.
