Ham-and-cheddar Muffins Recipe

Ingredients
  • 1/2 c milk
  • 1 medium-size sweet onion, finely sliced
  • 3 tbsps butter or margarine
  • 1 large egg
  • 1 c finely sliced cooked ham
  • 1 1/2 c all-purpose baking mix
  •  Poppy seeds (optional)
  • 2 c (8 oz) shredded Cheddar cheese, divided

Directions
  • Step #1 Melt butter in a skillet over medium-high heat; add onion, & sauté 3 to 5 mins or until tender.
  • Step #2 Combine baking mix & half of cheese In a large-ish bowl; make a well in center of mixture.
  • Step #3 Stir together milk & egg, mixing well; add to cheese mixture, stirring until moistened.
  • Step #4 Stir in onion & ham.
  • Step #5 Spoon into lightly greased muffin pans, filling two-thirds full.
  • Step #6 Sprinkle top with remaining 1 c cheese.
  • Step #7 Sprinkle top with poppy seeds, if desired.
  • Step #8 Bake at 425° for 18 mins or until golden.
  • Step #9 Let stand 2 to 3 mins before removing from pans.
  • Step #10 NOTE: Substitute mini muffin pans for regular pans, if desired.
  • Step #11 Bake at 425° for 14 mins or until golden.
  • Step #12 Makes 2 1/2 dozen mini muffins.
  • Step #13 Reduced-fat Ham-and-Cheddar Muffins: Substitute low-fat baking mix, fat-free or low-fat shredded Cheddar cheese, & fat-free milk.
  • Step #14 Reduce butter to 1 tbsp; proceed with recipe as directed.
  • Step #15 Ham-and-Swiss Muffins: Substitute shredded Swiss cheese for Cheddar; whisk in 2 tbsps Dijon mustard with milk & egg.
  • Step #16 Proceed with recipe as directed.
  • Step #17 Sausage-and-Cheese Muffins: Substitute 1 c hot or mild ground pork sausage, cooked & crumbled, for sliced ham.
  • Step #18 Proceed with recipe as directed.
  • Step #19 Chicken-and-Green Chile Muffins: Substitute 1 c finely sliced cooked chicken for ham & 2 c shredded Mexican four-cheese mix for Cheddar; add 1 (5-oz) can sliced green chiles.
  • Step #20 Proceed with recipe as directed.
