Warmed Stuffed Peaches Recipe

Ingredients
  • 1 (12-oz) can peach nectar
  • 1/2 c vanilla yogurt, divided
  • 1/4 c slivered almonds, toasted
  • 4 peaches, halved & pitted
  • 2 tbsps graham cracker crumbs
  • 1/4 tsp ground allspice
  • 1/2 c dried tropical mixed fruit (such as Sunkist brand)
  • 2 tbsps brown sugar

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Scoop out peach pulp to form a 2-inch circle in center of each half.
  • Step #3 Reserve pulp, & finely chop.
  • Step #4 Combine pulp, dried fruit, graham cracker crumbs, brown sugar, toasted almonds, & allspice.
  • Step #5 Divide the pulp mixture evenly among peach halves.
  • Step #6 Place stuffed peach halves in an 11 x 7-inch baking dish.
  • Step #7 Add nectar to pan.
  • Step #8 Bake at 350° for 40 mins or until peaches are tender.
  • Step #9 Drizzle peach halves evenly with liquid from pan.
  • Step #10 Top evenly with yogurt.
