Huevos Rancheros Recipe

Ingredients
  • 1 c sliced onion
  • 3 garlic cloves, minced
  • 4 (6-inch) corn tortillas
  • 1/4 c canned sliced green chiles
  • 1 (14.5-oz) can sliced tomatoes, undrained
  • 1/4 c New Mexican Red Chile Sauce
  •  Cooking spray
  • 1/2 c sliced green bell pepper
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/4 c (1 oz) shredded Monterey Jack cheese
  •  or
  • 2 tsps New Mexico chile powder
  • 1/2 tsp hot sauce
  • 1/4 c Green Chile Sauce
  • 4 large eggs
  • 2 tsps sliced fresh cilantro

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Coat tortillas with cooking spray; place on a baking sheet.
  • Step #3 Bake at 350° for 12 mins or until crisp.
  • Step #4 Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Step #5 Add onion, bell pepper, & garlic; sauté 3 mins.
  • Step #6 Add green chiles & next 5 ingredients (green chiles through tomatoes).
  • Step #7 Bring to a boil; cook 3 mins or until thick.
  • Step #8 Heat a large nonstick skillet coated with cooking spray over medium-low heat.
  • Step #9 Add eggs to pan; cook 3 mins or until done.
  • Step #10 Place 1 tortilla on each of 4 plates.
  • Step #11 Top each tortilla with 1/2 c tomato mixture & 1 egg.
  • Step #12 Spoon 1 tbsp New Mexican Red Chile Sauce or Green Chile Sauce over each serving; sprinkle each serving with 1 tbsp cheese & 1/2 tsp cilantro.
