Ingredients
1 carton (8 oz.) whipped cream cheese
12 oz thin-sliced smoked salmon
3/4 c very thinly sliced red onion (about 4 oz.)
Salt & pepper
1 English cucumber (about 8 oz.), rinsed & very thinly sliced
2 pieces soft lahvosh or flatbread (about 13 by 18 in. each)
2 tbsps sliced parsley
Directions
Step #1 Place one piece of lahvosh on a sheet of plastic wrap.
Step #2 With a flexible spatula or a knife, spread about 1/2 c cream cheese in a thin, even layer over entire surface of bread.
Step #3 Sprinkle top with 1 tbsp parsley, then lightly with salt & pepper.
Step #4 Arrange half the smoked salmon slices on top, leaving a 1-inch border along short ends of lahvosh.
Step #5 Arrange half the cucumber & onion slices evenly over salmon.
Step #6 Beginning at a short end, roll lahvosh as tightly as possible, taking care not to push filling forward as you go.
Step #7 Wrap tightly in plastic wrap.
Step #8 Repeat to fill, roll, & wrap second lahvosh.
Step #9 Chill rolls for at least 1 hr or up to 8 hrs.
Step #10 Unwrap rolls & trim off about 1 inch from each end (save to eat later).
Step #11 Cut each roll this into eight equal pieces & arrange on a platter.
Step #12 Nutritional analysis per roll-up.
