Smoked Salmon Frittata Recipe

Ingredients
  • 2 tbsps butter
  • 2 oz cream cheese, cut into small pieces
  • 8 large eggs
  • 6 oz smoked salmon, cut into strips
  • 1/4 c sliced red onion
  • 1/4 c sliced fresh chives, divided
  • 1/3 c sour cream
  • 2 tbsps Dijon mustard

Directions
  • Step #1 Whisk together 2 tbsps chives, eggs, sour cream, & mustard In a large-ish bowl.
  • Step #2 Melt butter In a large-ish oven-proof skillet over med-heat/flame.
  • Step #3 Reduce heat to low; add egg mixture.
  • Step #4 As egg mixture starts to cook, carefully lift edges with a spatula & tilt pan so uncooked portion flows underneath.
  • Step #5 Cook 6 to 8 mins or until uncooked egg mixture no longer flows underneath cooked mixture.
  • Step #6 Remove from heat.
  • Step #7 Sprinkle top with salmon, cream cheese, & onion.
  • Step #8 Broil frittata, 3 inches from heat, 3 mins or until set & cream cheese begins to melt.
  • Step #9 Remove from oven, & sprinkle with remaining chives.
  • Step #10 Cut into wedges, & serve as soon as possible.
