Garlic-cheese Grits Soufflé Recipe

Ingredients
  • 1/4 tsp ground turmeric
  • 4 c water
  • 4 large eggs, separated
  • 2 c (8 oz) shredded sharp Cheddar cheese
  •  Paprika
  • 1 c uncooked regular grits
  • 1/4 tsp cream of tartar
  • 2 tbsps butter or margarine
  • 1/2 tsp pepper
  • 1/8 tsp hot sauce
  • 1/4 tsp dry mustard
  • 2 garlic cloves, minced
  • 3/4 tsp salt

Directions
  • Step #1 Melt butter in a medium saucepan over med-heat/flame; add garlic, & sauté until tender.
  • Step #2 Stir in 4 c water & next 4 ingredients; bring to a boil.
  • Step #3 Gradually stir in the grits.
  • Step #4 Reduce heat, stirring every once in awhile, & let simmer, 15 to 20 mins or until thickened.
  • Step #5 Remove from heat; stir in the egg yolks, cheese, & hot sauce.
  • Step #6 Beat egg whites & cream of tartar at high speed with a mixer until stiff peaks form.
  • Step #7 Fold one-fourth of egg whites into grits.
  • Step #8 Fold grits into remaining egg whites.
  • Step #9 Pour into a greased & floured 2-quart soufflé dish; sprinkle with paprika.
  • Step #10 Bake at 400° for 45 mins or until puffed & lightly browned.
