Savory Spinach-gorgonzola Custards Recipe

Ingredients
  • 1/4 tsp salt
  • 1/2 c frozen sliced spinach, thawed
  • 1/2 (8-oz) package fat-free cream cheese, softened
  • 2 large onions, halved & thinly sliced
  • 1/4 tsp pepper
  • 1 c reduced-fat milk (2%)
  • 3 oz crumbled Gorgonzola cheese*
  • 2 tsps brown sugar
  • 2 tsps olive oil
  •  Vegetable cooking spray
  • 1/4 tsp ground nutmeg
  • 1 large egg
  • 1/2 c egg substitute

Directions
  • Step #1 Drain spinach well, pressing between layers of paper towels.
  • Step #2 Set aside.
  • Step #3 Sauté sliced onions in hot oil In a large-ish nonstick skillet over med-heat/flame 5 mins.
  • Step #4 Stir in brown sugar; cook, stirring every once in awhile, 20 mins or until onions are caramel colored.
  • Step #5 Reserve 1/4 c onions.
  • Step #6 Spoon remaining onions evenly into 6 (6-oz) custard c coated with cooking spray; sprinkle evenly with Gorgonzola cheese.
  • Step #7 Beat cream cheese with an electric mixer until smooth.
  • Step #8 Add egg & next 5 ingredients, beating just until mixed.
  • Step #9 Stir in spinach.
  • Step #10 Spoon evenly over cheese in custard c.
  • Step #11 Place c in a 13- x 9-inch pan.
  • Step #12 Add hot water to pan to a depth of 1 inch.
  • Step #13 Bake at 350° for 30 to 40 mins or until almost set.
  • Step #14 Remove c from pan.
  • Step #15 Let stand 10 mins; unmold, & top this with reserved onions.
  • Step #16 *1 (4-oz) package crumbled blue cheese may be substituted.
