Christopsomo (greek Christmas Bread) Recipe

Ingredients
  • 1 large egg white, lightly beaten
  • 1/2 c warm water (100° to 110°)
  • 2 large eggs
  • 1/2 tsp salt
  • 1 package dry yeast (about 2 1/4 tsps)
  • 8 candied cherries
  • 2 tbsps nonfat dry milk
  • 2 tsps aniseed, crushed
  • 6 tbsps butter or stick margarine, softened
  •  Cooking spray
  • 1/3 c sugar
  • 1 tbsp sugar
  • 3 1/2 c all-purpose flour, divided

Directions
  • Step #1 Dissolve yeast & 1 tbsp sugar in warm water In a large-ish bowl; let this stand 5 mins.
  • Step #2 Add the butter & eggs; beat at medium speed of a mixer until smooth.
  • Step #3 Lightly spoon the flour into dry measuring c, & level with a knife.
  • Step #4 Combine 3 c flour, & salt; add to yeast mixture, 1/3 c sugar, aniseed, dry milk, beating well.
  • Step #5 Turn the dough out onto a lightly floured surface.
  • Step #6 Knead until smooth & elastic (about 10 mins); add enough of remaining flour, 1 tbsp at a time, to prevent dough from sticking to hands.
  • Step #7 Place dough In a large-ish bowl coated with cooking spray, turning to coat top.
  • Step #8 Cover up & let rise in a warm place (85°), free from drafts, about 1 1/2 hrs.
  • Step #9 Dough will not double in size.
  • Step #10 (Press two fingers into dough.
  • Step #11 If indentation remains, the dough has risen enough.
  • Step #12 )Punch dough down; let rest 5 mins.
  • Step #13 Pinch 2 (1 1/2-inch) balls off dough; cover & set aside.
  • Step #14 Shape remaining dough into an 8-inch round; place on a baking sheet coated with cooking spray.
  • Step #15 Brush with egg white.
  • Step #16 Shape each dough ball into an 8-inch-long rope; cut a 2-inch slash into the ends of each rope.
  • Step #17 Place 1 rope across middle of dough; brush the middle of the rope with egg white.
  • Step #18 Place the other rope across the middle of the rope, forming a cross.
  • Step #19 Curl the slashed ends together to form a circle; place a cherry in the middle of each circle.
  • Step #20 Arrange 4 cherries around center of cross.
  • Step #21 Cover up & let rise 1 hr.
  • Step #22 Preheat oven to 350°.
  • Step #23 Uncover dough.
  • Step #24 Bake at 350° for 35 mins or until loaf sounds hollow when tapped.
  • Step #25 Remove loaf from pan, & cool on a wire rack.
  • Step #26 NOTE: If you don't have time to decorate this bread, skip step Punch dough down; let rest.
  • Step #27 Shape the dough into a 8-inch round.
  • Step #28 Cover up & let rise 1 hr.
  • Step #29 Bake as directed.
