Pecan-coconut Granola Recipe

Ingredients
  • 1/4 c butter or margarine
  • 1/2 to 3/4 c firmly packed light brown sugar
  • 1/2 c canola oil
  • 1/2 c sweetened flaked coconut
  • 1 tsp ground cinnamon
  • 1/2 c sliced pecans or almonds
  • 1/3 c raisins or sliced dates
  • 1/2 c water
  • 1 (12-oz) package matzo farfel*

Directions
  • Step #1 Cook first 4 ingredients over med-heat/flame In a large-ish saucepan, stirring constantly, until butter melts.
  • Step #2 Stir in pecans, coconut, & cinnamon.
  • Step #3 Add matzo farfel; toss well to coat.
  • Step #4 Spread in a lightly greased, aluminum foil wrap-lined 15- x 10-inch jellyroll pan.
  • Step #5 Bake at 350° for 35 mins or until golden brown, stirring every once in awhile.
  • Step #6 Remove from oven.
  • Step #7 Stir in raisins, & cool completely.
  • Step #8 * Matzo farfel is coarsely crumbled matzo.
  • Step #9 If this recipe is not served for Passover, 1 to 1 1/2 c uncooked regular oats may be substituted.
