Caramelized Onion And Canadian Bacon Strata Recipe

Ingredients
  • 1 1/2 c vertically sliced onion
  • 2 c 1% low-fat milk
  • 1/4 tsp salt
  • 1 1/3 c finely sliced red bell pepper
  • 6 c (1-inch) cubed sourdough bread (about 12 oz)
  • 1/4 tsp freshly ground black pepper
  • 3/4 c sliced Canadian bacon
  •  Cooking spray
  • 2 large eggs
  • 4 large egg whites
  • 1 c (4 oz) shredded Swiss cheese
  • 1 1/2 tbsps spicy brown mustard
  • 1 tsp butter

Directions
  • Step #1 Melt butter In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Add onion, & sauté 4 mins.
  • Step #3 Reduce heat; cook 10 mins or until golden brown, stirring every once in awhile.
  • Step #4 Add bell pepper; cook for 1 min.
  • Step #5 Remove from heat; stir in the bacon.
  • Step #6 Arrange 3 c bread in an 11 x 7-inch baking dish coated with cooking spray; top this with half of onion mixture.
  • Step #7 Repeat layer with remaining bread & onion mixture.
  • Step #8 Combine milk & next 5 ingredients (milk through eggs) in a medium bowl; stir well with a whisk.
  • Step #9 Pour egg mixture over bread mixture, & top this with the cheese.
  • Step #10 Cover up & put in the fridge at least 8 hrs or overnight.
  • Step #11 Preheat oven to 375°.
  • Step #12 Let the casserole stand 30 mins at about room temp.
  • Step #13 Uncover & bake this at 375° for 40 mins or until golden brown.
  • Step #14 Let stand 5 mins before serving.
