Gingerbread Pancakes Recipe

Ingredients
  • 2 tsps baking powder
  • 2 tbsps sugar
  • 1 1/3 c all-purpose flour
  • 1 tbsp molasses
  • 1/4 c buttermilk
  • 2 tbsps butter, melted
  • 1/2 c milk
  • 1 tsp pumpkin pie spice (or freshly ground cinnamon, cloves, ginger, & nutmeg)
  • 1 egg
  • 1/4 tsp salt
  • 1/2 c dark amber beer or stout

Directions
  • Step #1 Whisk together first 5 ingredients In a large-ish bowl.
  • Step #2 Combine milk & next 5 ingredients in a separate bowl, & whisk until slightly frothy; add to flour mixture, & whisk just until mixed.
  • Step #3 Spoon about 2 tbsps of batter onto a hot, lightly greased griddle or nonstick pan.
  • Step #4 Cook until pancakes are covered with bubbles & edges turn brown.
  • Step #5 Turn & cook other side 2 mins or until golden brown.
