Triple-fruit Scones Recipe

Ingredients
  • 1/3 c sliced dried apricots
  • 1/3 c sugar
  • 1/4 tsp salt
  • 1 large egg white
  •  Cooking spray
  • 1/3 c sweetened dried cranberries (such as Craisins)
  • 1/2 tsp baking soda
  • 2 tsps grated orange rind
  • 3 c all-purpose flour
  • 1 tbsp sugar
  • 1 large egg
  • 6 tbsps chilled stick margarine or butter
  • 3/4 c low-fat buttermilk
  • 1 tbsp baking powder

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour, 1/3 c sugar, baking powder, baking soda, & salt; cut in margarine with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #4 Stir in apricots & cranberries.
  • Step #5 Combine buttermilk, orange rind, & egg white; add to flour mixture, egg, stirring just until moist.
  • Step #6 Turn dough out onto a lightly floured surface; knead lightly 4 times with floured hands.
  • Step #7 Roll dough into a 12 x 6-inch rectangle.
  • Step #8 Cut dough into 8 (3-inch) squares using a dull knife or a dough scraper.
  • Step #9 Cut each square into 2 triangles; place on a baking sheet coated with cooking spray.
  • Step #10 Sprinkle top with 1 tbsp sugar; bake this at 400° for 12 mins or until golden.
  • Step #11 Serve warm.
