1/3 c sweetened dried cranberries (such as Craisins)
1/2 tsp baking soda
2 tsps grated orange rind
3 c all-purpose flour
1 tbsp sugar
1 large egg
6 tbsps chilled stick margarine or butter
3/4 c low-fat buttermilk
1 tbsp baking powder
Directions
Step #1 Preheat oven to 400°.
Step #2 Lightly spoon flour into dry measuring c; level with a knife.
Step #3 Combine flour, 1/3 c sugar, baking powder, baking soda, & salt; cut in margarine with a pastry mixer or 2 knives until mixture resembles coarse meal.
Step #4 Stir in apricots & cranberries.
Step #5 Combine buttermilk, orange rind, & egg white; add to flour mixture, egg, stirring just until moist.
Step #6 Turn dough out onto a lightly floured surface; knead lightly 4 times with floured hands.
Step #7 Roll dough into a 12 x 6-inch rectangle.
Step #8 Cut dough into 8 (3-inch) squares using a dull knife or a dough scraper.
Step #9 Cut each square into 2 triangles; place on a baking sheet coated with cooking spray.
Step #10 Sprinkle top with 1 tbsp sugar; bake this at 400° for 12 mins or until golden.
