Potato-and-egg Burritos Recipe

Ingredients
  • 10 (6-inch) flour tortillas
  •  Shredded Cheddar cheese (optional)
  • 1 dozen large eggs
  • 3/4 tsp pepper
  •  Salsa (optional)
  • 1 (16-oz) package frozen shredded hash browns, thawed
  • 1 medium onion, sliced
  • 1 tsp salt
  • 8 bacon slices

Directions
  • Step #1 Heat tortillas according to package directions; keep warm.
  • Step #2 Cook bacon In a large-ish nonstick skillet until crisp; remove bacon, & drain on paper towels, reserving 1 tbsp drippings in skillet.
  • Step #3 Crumble bacon, & set aside.
  • Step #4 Cook hash browns & onion in hot drippings over medium-high heat, stirring often, 10 mins or until lightly browned & onion is tender.
  • Step #5 Whisk together eggs, salt, & pepper.
  • Step #6 Pour into skillet, stirring carefully, & cook, over med-heat/flame 8 to 10 mins or until eggs are cooked.
  • Step #7 Remove from heat, & stir in the bacon.
  • Step #8 Spoon egg mixture evenly down centers of tortillas, & top this with cheese, if desired.
  • Step #9 Fold opposite sides of tortillas over filling, & serve as soon as possible.
  • Step #10 Serve with salsa, if desired.
