Step #1
Bring a large pot of lightly salted water to a boil.
Step #2 Add pasta & cook for 8 to 10 mins or until al dente; drain & set aside.
Step #3 In a large bowl, parsley, Parmesan cheese, mix ricotta cheese, eggs, basil & ground black pepper.
Step #4 Stir to mix; set aside.
Step #5 Heat oil in a large saucepan over high heat.
Step #6 Saute onions for about 5 mins, stirring every once in awhile; add carrot slices & saute about 2 mins, then stir in the green bell pepper & broccoli.
Step #7 Stir all together, reduce heat to medium & cook this until tender, about 5 mins.
Step #8 Scrape veggies into ricotta mix & mix well.
Step #9 Preheat oven to 350 degrees F (175 degrees C).
Step #10 Ladle 1 c of spaghetti sauce into a 9x13 inch baking dish & spread evenly over the bottom.
Step #11 Place 2 strips of lasagna lengthwise in the dish, then spread about 4 c of the filling over the pasta.
Step #12 Sprinkle top 1 c of the mozzarella cheese over the filling; repeat layers.
Step #13 Bake at 350 degrees F (175 degrees C) for 1 hr; let this stand about 15 to 20 mins, to firm up, before serving.
