Pumpkin-cranberry Loaf Recipe

Ingredients
  • 1/4 tsp salt
  •  Vegetable cooking spray
  • 1 1/2 tsps vanilla extract
  • 2/3 c firmly packed dark brown sugar
  • 2 tsps baking powder
  • 1/4 c sliced pecans
  • 1/4 c vegetable oil
  • 1/2 c sugar
  • 1 c canned pumpkin
  • 3 egg whites, lightly beaten
  • 1 3/4 tsps pumpkin pie spice
  • 1/4 c water
  • 2 c all-purpose flour
  • 3/4 c coarsely sliced cranberries

Directions
  • Step #1 Combine the first 6 ingredients In a large-ish bowl; make a well in center of mixture.
  • Step #2 Combine pumpkin, & egg whites; add to dry ingredients, vanilla, oil, water, stirring just until dry ingredients are moistened.
  • Step #3 Fold in cranberries.
  • Step #4 Pour batter into a 9 x 5-inch loaf pan coated with cooking spray; sprinkle pecans over batter.
  • Step #5 Bake at 350° for 1 hr & 5 mins or until a wooden pick inserted in center comes out clean.
  • Step #6 Let cool in pan 10 mins on a wire rack; remove this from pan, & let cool completely on wire rack.
