Step #1 Combine the first 6 ingredients In a large-ish bowl; make a well in center of mixture.
Step #2 Combine pumpkin, & egg whites; add to dry ingredients, vanilla, oil, water, stirring just until dry ingredients are moistened.
Step #3 Fold in cranberries.
Step #4 Pour batter into a 9 x 5-inch loaf pan coated with cooking spray; sprinkle pecans over batter.
Step #5 Bake at 350° for 1 hr & 5 mins or until a wooden pick inserted in center comes out clean.
Step #6 Let cool in pan 10 mins on a wire rack; remove this from pan, & let cool completely on wire rack.
