Brown Sugar-banana Muffins Recipe

Ingredients
  • 1/2 c toasted sliced pecans
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/4 c buttermilk
  • 1/2 c butter, softened
  • 2 1/4 c all-purpose flour
  • 1 c firmly packed brown sugar
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 c mashed ripe bananas (about 2 large)

Directions
  • Step #1 Beat butter at medium speed with an electric mixer until creamy.
  • Step #2 Gradually add brown sugar, beating until light & fluffy.
  • Step #3 Add eggs, 1 at a time, beating just until mixed after each addition.
  • Step #4 Stir together mashed bananas, buttermilk, & vanilla.
  • Step #5 Stir together flour & next 3 ingredients; add to butter mixture alternately with banana mixture, beginning & ending with flour mixture.
  • Step #6 Beat at lowish speed just until mixed after each addition.
  • Step #7 (Do not overbeat.
  • Step #8 ) Spoon batter into 12 lightly greased muffin c, filling two-thirds full.
  • Step #9 Sprinkle top evenly with pecans.
  • Step #10 Bake at 350° for 20 to 25 mins or until a wooden pick inserted in center comes out clean.
  • Step #11 Remove from pans as soon as possible, & cool 10 mins on wire racks.
  • Step #12 Tip: If you don't have buttermilk, stir 3/4 tsp.
  • Step #13 lemon juice or vinegar into 1/4 c milk.
