Scrambled Eggs With Smoked Salmon, Spinach, And Chives Recipe

Ingredients
  • 1/2 c (4 oz) 1/3-less-fat cream cheese, sliced
  • 1 tbsp olive oil
  • 3 whole wheat English muffins, split & toasted
  • 3 oz thinly sliced smoked salmon, sliced
  • 1 c sliced fresh spinach
  • 5 large eggs
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp sliced chives (optional)

Directions
  • Step #1 Heat oil in medium nonstick skillet over med-heat/flame.
  • Step #2 Combine eggs & pepper in medium bowl; stir well with whisk.
  • Step #3 Pour egg mixture into skillet; cook 30 seconds or until mixture begins to thicken, stirring slowly with wooden spoon.
  • Step #4 Stir in salmon & cream cheese; cook 30 seconds, smashing cream cheese lumps with spoon.
  • Step #5 Stir in spinach; cook 2 mins or until spinach wilts & eggs are cooked, stirring constantly.
  • Step #6 Top each muffin half with 1/2 c egg mixture.
  • Step #7 Garnish with chives, if desired.
