Sweet Potato Angel Biscuits Recipe

Ingredients
  • 1 tbsp salt
  • 3 packages active dry yeast
  • 1 1/2 c shortening
  • 3 c canned mashed sweet potatoes
  • 1 tbsp baking powder
  • 3/4 c warm water (100° to 110°)
  • 1 1/2 c sugar
  • 7 1/2 c all-purpose flour

Directions
  • Step #1 Combine yeast & 3/4 c warm water in a 2-c liquid measuring c; let this stand 5 mins.
  • Step #2 Stir together flour & next 3 ingredients In a large-ish bowl; cut in shortening with a pastry mixer until mixture is crumbly.
  • Step #3 Stir in yeast mixture & sweet potatoes just until mixed.
  • Step #4 Turn dough out onto a lightly floured surface, & knead until smooth & elastic (about 5 mins).
  • Step #5 Place dough in a well-greased bowl, turning to grease top.
  • Step #6 Cover up & chill 8 hrs, if desired.
  • Step #7 Roll dough to 1/2-inch thickness; cut with a 2-inch round cutter.
  • Step #8 Freeze up to 1 month, if desired.
  • Step #9 Thaw biscuits; place on ungreased baking sheets.
  • Step #10 Cover up & let rise in a warm place (85°), free from drafts, 20 mins or until doubled in bulk.
  • Step #11 Bake at 400° for 10 to 12 mins or until lightly browned.
