Asiago Sun-dried Tomato Bread
Ingredients
1 1/2 c all-purpose flour
2 tsps grated lemon rind
1/2 tsp ground cinnamon
1/4 c plain low-fat yogurt
2 large eggs, lightly beaten
2 c sliced pitted prunes (dried plums)
2 1/2 tsps baking powder
Cooking spray
1/4 c vegetable oil
3/4 c packed brown sugar
1 3/4 c port or other sweet red wine
1/2 c whole-wheat or all-purpose flour
1 tbsp turbinado sugar or granulated sugar
1/2 tsp salt
1 tsp vanilla extract
Directions
Step #1 Combine prunes & port in a small saucepan; bring to a boil.
Step #2 Cover up & remove this from heat; let this stand 30 mins.
Step #3 Preheat oven to 350°.
Step #4 Lightly spoon flours into dry measuring c; level with a knife.
Step #5 Combine all-purpose flour & next 5 ingredients (all-purpose flour through cinnamon) in a medium bowl; stir well with a whisk.
Step #6 Make a well in center of mixture.
Step #7 Drain prunes in a colander over a bowl, reserving liquid.
Step #8 Combine reserved liquid, oil, & next 4 ingredients (oil through eggs); stir well with a whisk.
Step #9 Stir in prunes.
Step #10 Add to flour mixture, stirring just until moist.
Step #11 Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray; sprinkle with turbinado sugar.
Step #12 Bake at 350° for 1 hr & 15 mins or until a wooden pick inserted in center comes out clean.
Step #13 Cool in pan for 10 mins on a wire rack; remove this from pan.
Step #14 Cool completely on a wire rack.
