Sweet Corn Muffins Recipe

Ingredients
  • 2/3 c plain low-fat yogurt
  • 3 tbsps fat-free milk
  • 1/4 tsp salt
  • 1 large egg, lightly beaten
  • 2 tsps baking powder
  • 1/4 c butter, melted
  • 3/4 c granulated sugar
  • 1/2 c yellow cornmeal
  • 1 1/2 c all-purpose flour (about 6 3/4 oz)
  • 2 tbsps turbinado sugar (optional)

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour, cornmeal, & salt in a medium bowl, baking powder, granulated sugar, stirring with a whisk.
  • Step #4 Make a well in center of mixture.
  • Step #5 Combine yogurt, & egg, stirring with a whisk; add to flour mixture, milk, melted butter, stirring just until moist.
  • Step #6 Place 12 paper muffin c liners in muffin c.
  • Step #7 Divide the batter evenly among c.
  • Step #8 Sprinkle top batter evenly with turbinado sugar, if desired.
  • Step #9 Bake at 375° for 20 mins or until a wooden pick inserted in center comes out clean.
  • Step #10 Cool on a wire rack.
