Step #1 Whisk together first 4 ingredients.
Step #2 Melt butter In a large-ish nonstick skillet over med-heat/flame; add egg mixture, without stirring, & cook, until eggs begin to set on bottom.
Step #3 Sprinkle top cream cheese cubes evenly over egg mixture; draw a spatula across bottom of skillet to form large curds.
Step #4 Cook until eggs are thickened but still moist.
Step #5 (Do not stir constantly.
Step #6 ) Remove from heat.
Step #7 Stir in sliced jalapeño pepper before serving.
Step #8 Sprinkle top tortillas evenly with 1 1/2 c shredded colby-Jack cheese.
Step #9 Top one half of each tortilla evenly with scrambled eggs & sausage.
Step #10 Sprinkle top evenly with 1/2 c shredded colby-Jack cheese.
Step #11 Fold tortillas over filling.
Step #12 Serve with sour cream & salsa.
Step #13 Note: To lighten, substitute 2 c egg substitute for eggs & 3 oz light cream cheese for 3 oz regular cream cheese.
Step #14 Proceed as directed.
