Potato-and-beet Greens Frittata Recipe

Ingredients
  • 1/3 c fat-free milk
  • 2 tbsps grated fresh Parmesan cheese
  • 3 large egg whites
  •  Cooking spray
  • 1/4 tsp salt
  • 1 tsp butter
  • 2 c finely sliced red potatoes (about 1 lb)
  • 1/4 tsp black pepper
  • 4 beet green leaves, optional
  • 1 c sliced beet greens
  • 4 large eggs
  • 1/3 c (about 1 1/2 oz) shredded part-skim mozzarella cheese

Directions
  • Step #1 Preheat broiler.
  • Step #2 Place potatoes in a medium saucepan, & cover with water; bring to a boil.
  • Step #3 Reduce heat, & let simmer for 8 mins.
  • Step #4 Add sliced beet greens; cook 2 mins or until tender.
  • Step #5 Drain.
  • Step #6 Combine milk & the next 5 ingredients (milk through egg whites) In a large-ish bowl, & stir with a whisk.
  • Step #7 Stir in potato mixture.
  • Step #8 Melt butter in a medium nonstick skillet coated with cooking spray over med-heat/flame.
  • Step #9 Pour the egg mixture into skillet; cook 15 mins or until top is just set.
  • Step #10 Sprinkle top with mozzarella.
  • Step #11 Wrap handle of skillet with foil wrap; broil 5 mins or until golden brown.
  • Step #12 Garnish with beet green leaves, if desired.
