Coffee Cake Croutons Recipe

Ingredients
  • 1 c toasted pecans, ground
  • 1/4 c Kahlúa or other coffee-flavored liqueur
  • 1/3 c strong brewed coffee
  • 1 (10 3/4-oz) frozen lb cake, thawed
  • 1/4 c sugar
  • 2/3 c sugar

Directions
  • Step #1 Trim crust from lb cake & cut cake into 1" cubes.
  • Step #2 Combine 2/3 c sugar & coffee in a small saucepan; bring to a boil over med-heat/flame, stirring frequently.
  • Step #3 Boil 1 min.
  • Step #4 Remove from heat & let cool 1 min.
  • Step #5 Stir in Kahlúa.
  • Step #6 Pour coffee syrup mixture into a small bowl & let cool completely.
  • Step #7 Combine pecans & 1/4 c sugar; stir well.
  • Step #8 Working quickly, dip each cake cube into coffee syrup.
  • Step #9 Roll each cube in pecan mixture, coating completely.
  • Step #10 Let cake cubes dry at about room temp on wire racks at least 2 hrs.
