Coconut-milk Pudding Rolls Recipe

Ingredients
  • 1 egg
  • 1/4 c butter, melted & cooled, plus more for buttering bowl
  • 1 can (13 1/2 oz.) coconut milk
  • 1 package dry active yeast
  • 1 c sugar
  • 3 1/4 c plus 1 tbsp. all-purpose flour
  • 1 tsp salt

Directions
  • Step #1 Dissolve yeast in 1 c warm water In a large-ish bowl.
  • Step #2 Stir in 1 1/2 c flour, melted butter, 1/4 c sugar, salt, & egg until smooth.
  • Step #3 Stir in 1 1/2 c flour & knead into soft dough, adding up to 1/4 c flour as needed.
  • Step #4 Put dough In a large-ish buttered bowl.
  • Step #5 Cover up & allow to rise until doubled in bulk, about 1 hr.
  • Step #6 Punch down & allow to double again, about 30 mins.
  • Step #7 Whisk together coconut milk, remaining 3/4 c sugar, & 1 tbsp.
  • Step #8 flour until smooth.
  • Step #9 Set aside.
  • Step #10 Divide dough into 24 small balls.
  • Step #11 Put them in a 9- by 13-in.
  • Step #12 baking pan, cover, & allow to double, about 30 mins.
  • Step #13 Preheat oven to 350°.
  • Step #14 Pour reserved coconut-milk mixture over raised rolls.
  • Step #15 Bake until golden brown, about 25 mins.
