Grits-and-sausage Casserole Recipe

Ingredients
  • 3 tbsps minced fresh parsley
  • 3 egg whites
  • 1 1/2 c water
  • 1 1/2 c 1% low-fat milk
  • 2 c red bell pepper strips
  • 1/2 lb turkey breakfast sausage
  • 3/4 c quick-cooking grits
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp garlic powder
  • 3/4 c (3 oz) shredded reduced-fat sharp cheddar cheese
  •  Cooking spray
  •  Dash of ground red pepper

Directions
  • Step #1 Cook sausage in a nonstick skillet over medium-high heat until browned, stirring to crumble.
  • Step #2 Drain & set aside.
  • Step #3 Combine milk & water in a saucepan; bring to a boil over medium-high heat.
  • Step #4 Stir in grits; cover, & let simmer 7 mins or until thick, reduce heat, stirring frequently.
  • Step #5 Combine grits mixture, salt, sausage, parsley, cheese, garlic, & peppers In a large-ish bowl; set aside.
  • Step #6 Beat egg whites at high speed of a mixer until stiff peaks form.
  • Step #7 Gently stir one-fourth of egg whites into grits mixture; carefully fold in remaining egg whites.
  • Step #8 Spoon mixture into a 1 1/2-quart casserole coated with cooking spray.
  • Step #9 Bake at 375° for 25 mins or until set & lightly browned.
  • Step #10 Place a medium nonstick skillet over medium-high heat until hot.
  • Step #11 Add bell pepper, & sauté 4 mins or until tender; serve warm with grits.
