Farmer's Oven-baked Omelet Recipe

Ingredients
  • 6 small plum tomatoes, seeded & sliced
  • 3/4 tsp freshly ground pepper
  • 2 tbsps sliced fresh thyme
  • 2 tbsps butter or margarine
  • 8 oz farmer cheese, shredded
  •  Garnish: fresh basil leaves
  • 12 large eggs
  • 1/2 c sour cream
  • 1/2 c sliced fresh basil
  • 1/4 tsp baking powder
  • 1 tsp salt

Directions
  • Step #1 Beat first 6 ingredients at medium speed with an electric mixer 2 to 3 mins or until well mixed.
  • Step #2 Melt butter in a 12-inch ovenproof skillet; add egg mixture.
  • Step #3 Bake at 350º for 15 mins.
  • Step #4 Remove from oven; sprinkle with tomatoes, cheese, & basil.
  • Step #5 Return to oven, & bake 15 to 20 more mins or until set.
  • Step #6 Garnish, if desired; serve as soon as possible.
  • Step #7 Note: Farmer cheese is a mild, part-skim, semisoft cheese available in 8-oz rounds.
  • Step #8 Havarti or Monterey Jack cheese may be substituted.
  • Step #9 Spinach, thawed, & Bacon Omelet: Substitute 1 (10-oz) package frozen, Cheddar, & well-drained sliced spinach for thyme.
  • Step #10 Omit farmer cheese & fresh basil.
  • Step #11 Top with 8 oz shredded Cheddar cheese & 1/2 c cooked, crumbled bacon.
