Crustless Veggie Sausage Quiche Recipe

Ingredients
  • 1/2 large sweet onion, sliced
  • 1 c egg substitute
  • 1 (8-oz) package vegetable breakfast patties*
  • 1 1/2 c (6 oz) reduced-fat Cheddar cheese
  • 1 (8-oz) container light sour cream
  •  Vegetable cooking spray
  • 1/2 lb sliced fresh mushrooms
  • 1 tbsp light butter or margarine
  • 1 c 1% low-fat cottage cheese
  • 3 tbsps all-purpose flour
  • 1 tsp hot sauce
  • 3 tbsps grated Parmesan cheese

Directions
  • Step #1 Prepare patties according to package directions; crumble & set aside.
  • Step #2 Melt butter In a large-ish skillet over medium-high heat; add mushrooms & onion, & sauté 5 mins or until tender.
  • Step #3 Process egg substitute, & next 4 ingredients in a food processor/blender until smooth, sour cream, stopping to scrape down sides.
  • Step #4 Stir together crumbled breakfast patties, mushroom mixture, egg substitute mixture, & Cheddar cheese.
  • Step #5 Spoon into a 10-inch quiche pan coated with cooking spray.
  • Step #6 Bake at 350° for 35 mins or until golden.
  • Step #7 Cool 10 mins.
  • Step #8 Cut quiche into 8 wedges.
  • Step #9 *If you'd rather have the meat, 1 c lean sliced cooked ham may be substituted for vegetable breakfast patties.
  • Step #10 Note: Individual wedges may be reheated in the microwave at MEDIUM (50% power) 1 min or until thoroughly heated.
