Power Biscotti Recipe

Ingredients
  • 1 c sugar
  • 2 tsps baking powder
  •  Cooking spray
  • 2 tsps almond extract
  • 1 tsp vanilla extract
  • 2 1/2 c all-purpose flour
  • 2 tbsps flaxseed
  • 1/4 c wheat bran
  • 1 tbsp vegetable oil
  • 3/4 c quick-cooking oats
  • 3 large eggs
  • 1/2 c sliced dried apricots
  • 1/2 c sliced almonds

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Lightly spoon flour into dry measuring c, & level with a knife.
  • Step #3 Combine the flour & the next 7 ingredients (flour through baking powder) In a large-ish bowl.
  • Step #4 Combine oil, & eggs; add to flour mixture, extracts, stirring until well-mixed (dough will be dry & crumbly).
  • Step #5 Turn dough out onto a lightly floured surface, & knead lightly 7 or 8 times.
  • Step #6 Divide the dough in half.
  • Step #7 Shape each portion into an 8-inch-long roll.
  • Step #8 Place the rolls 6 inches apart on a baking sheet coated with cooking spray; flatten each roll to 1-inch thickness.
  • Step #9 Bake at 350° for 30 mins.
  • Step #10 Remove rolls from baking sheet; cool 10 mins on a wire rack.
  • Step #11 Cut each roll diagonally into 15 (1/2-inch) slices.
  • Step #12 Place the slices, cut sides down, on baking sheet.
  • Step #13 Reduce oven temperature to 325°; bake 10 mins.
  • Step #14 Turn cookies over; bake an extra 10 mins (the cookies will be slightly soft in center but will harden as they cool).
  • Step #15 Remove from baking sheet; cool completely on wire rack.
