Coconut Frushi Recipe

Ingredients
  • 1/4 c sugar
  • 10 orange sections
  • 1/4 c light coconut milk
  •  Cooking spray
  • 1 1/4 c water
  • 1 c uncooked sushi rice or other short-grain rice
  •  Dash of salt
  • 20 fresh raspberries
  • 1 (6-oz) carton vanilla fat-free yogurt

Directions
  • Step #1 Bring water & rice to a boil in a medium saucepan.
  • Step #2 Cover up, reduce heat, & let simmer 15 mins or until water is almost absorbed.
  • Step #3 Remove from heat; let this stand, covered, 15 mins.
  • Step #4 Place rice In a large-ish bowl.
  • Step #5 Add sugar, & salt, coconut milk, stirring carefully until well mixd.
  • Step #6 Cover up & let this stand 20 mins.
  • Step #7 Lightly coat hands with cooking spray.
  • Step #8 Divide rice mixture into 20 equal portions, shaping each into a ball (about 1 rounded tbsp each).
  • Step #9 Lightly press each rice ball into an oval between palms; place ovals on a baking sheet lined with wax paper.
  • Step #10 Top each of 10 ovals with 1 orange section, & press carefully to adhere.
  • Step #11 Top each of the remaining 10 ovals with 2 raspberries.
  • Step #12 Cover up & chill frushi until ready to serve.
  • Step #13 Serve with yogurt for dipping.
