Pumpkin Cornmeal Muffins Recipe

Ingredients
  • 1 15-oz can solid pumpkin
  • 1/4 tsp ground cloves
  • 1/2 c milk
  • 4 eggs
  • 1 tsp ground cinnamon
  • 1 1/2 c whole-wheat flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 c unsalted butter, softened
  • 1 c yellow cornmeal
  • 2 tsps baking powder
  • 3/4 c light brown sugar

Directions
  • Step #1 Heat oven to 350° F.
  • Step #2 If not using silicone pans, lightly coat two 6-c muffin tins with vegetable cooking spray.
  • Step #3 In a large bowl, with an electric mixer on medium-high speed, beat the butter & brown sugar until light & fluffy.
  • Step #4 Reduce speed to slow, add the remaining ingredients, & beat for 3 mins or just until smooth.
  • Step #5 Spoon the batter into the muffin pans.
  • Step #6 Bake 25 to 30 mins or until a toothpick inserted into a muffin comes out clean.
  • Step #7 Remove from oven & cool on a wire rack.
