Ham-and-swiss Muffins Recipe

Ingredients
  • 2 tbsps Dijon mustard
  • 1 c finely sliced cooked ham
  • 3 tbsps butter or margarine
  •  Poppy seeds (optional)
  • 1 medium sweet onion, finely sliced
  • 1 large egg
  • 1 1/2 c c all-purpose baking mix
  • 2 c (8-oz) shredded Swiss cheese, divided
  • 1/2 c milk

Directions
  • Step #1 Melt butter in a skillet over medium-high heat; add onion, & sauté 3 to 5 mins or until tender.
  • Step #2 Combine baking mix & half of cheese In a large-ish bowl; make a well in center of mixture.
  • Step #3 Stir together milk, Dijon mustard, mixing well; add to cheese mixture, & egg, stirring until moistened.
  • Step #4 Stir in onion & ham.
  • Step #5 Spoon into lightly greased muffin pans, filling two-thirds full.
  • Step #6 Sprinkle top with remaining 1 c cheese.
  • Step #7 Sprinkle top with poppy seeds, if desired.
  • Step #8 Bake at 425º for 18 mins or until golden.
  • Step #9 Let stand 2 to 3 mins before removing from pans.
  • Step #10 Note: Substitute mini muffin pans for regular pans, if desired.
  • Step #11 Bake at 425º for 14 mins or until golden.
  • Step #12 Makes 2 1/2 dozen mini muffins.
